Green-Pea Hummus

This hummus is so delicious, I can’t stop eating it. And it’s a great colour, so it looks nice on a plate, too! The peas are naturally sweet, and the truffle oil is a delicious ingredient.

Ingredients

2 cups green peas, fresh or frozen

1 clove garlic, roughly chopped

2 Tbsp pecorino, parmesan, or Romano cheese

1 tsp truffle oil

1 Tbsp olive oil

1 tsp fresh chives

salt & pepper to taste

1-2 Tbsp of water if needed

Method

Blanch the peas: boil them for 4-5 minutes, drain, then rinse with very cold water to preserve the colour and stop the cooking.

Combine ingredients in a food processor and puree until smooth. If necessary, add a tablespoon or two of water.

Serve with crackers, as a dip for carrots and celery, or as a side like you would mashed potatoes.
