Okay, I think I’ve done it. I think I’ve invented the BEST avocado toast ever! And by “invented” I mean borrowed and combined from two sources: Earl’s and a Facebook friend.
Yield: 1 serving/2 slices
Ingredients
- 2 slices bread (my favourite is Canyon Bakehouse Gluten-Free 7-Grain)
- 1 ripe (soft) avocado
- 2 radishes
- 2 Tbsp. diced tomato
- 2 tsp. pomegranate seeds
- 1 tsp. toasted hemp hearts
- Siracha
- Salt & pepper to taste
Method
- Thinly slice the radishes
- Toast the bread
- Spread half of the avocado on each slice of toast and sprinkle with salt and pepper to taste
- Top each slice with half of the radish slices, diced tomato, and pomegranate seeds
- Sprinkle with hemp hearts
- Dot with siracha, to taste
